Sourdough Waffles

Sourdough can be used as a leavening agent in waffles just like it is used in bread. The sourdough starter contains wild yeast and lactic acid bacteria that are responsible for fermenting the dough and creating air pockets, which help to make the waffles fluffy and light.

To use sourdough in making waffles, you will need to prepare a sourdough-based batter and let it ferment overnight or for several hours, depending on how active your sourdough starter is. The longer the fermentation period, the more pronounced the sourdough flavor will be in your waffles.

One important thing to keep in mind is that sourdough waffles will not have the same texture and flavor profile as traditional waffles that are made with baking powder or baking soda. They will have a tangy, slightly sour flavor and a denser texture, which some people prefer.

Overall, using sourdough to make waffles is a great way to add some complexity and depth of flavor to your breakfast. Just be prepared for a slightly different taste and texture than you may be used to.

Ingredients:
- 1 cup of sourdough starter
- 1 1/2 cups of flour
- 2 tbsp. of sugar
- 1 tsp. of baking powder
- 1/2 tsp. of baking soda
- 1/2 tsp. of salt
- 2 eggs
- 1/4 cup of melted butter
- 1 tsp. of vanilla extract
- 1 cup of milk
 
Instructions:
 
1. Combine the sourdough starter, flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
 
2. In another bowl, beat the eggs and add melted butter, vanilla extract, and milk to it. Mix it well.
 
3. Gradually pour the egg mixture into the dry ingredients bowl and mix them well.
 
4. Let the batter sit for about 10 minutes to thicken. Meanwhile, preheat the waffle iron.
 
5. Grease the waffle iron and pour a ladle of the batter onto the waffle iron. Spread the batter gently and close the lid. Cook until the waffles are golden brown and crispy.
 
6. Serve the waffles with your favorite toppings like butter, fruit, syrup, whipped cream, or nuts.
